In a Journal of Nutrition study published in October 2015, a professor in Skidmore College's health and sports sciences department, Paul Arciero and his team cooked a series of four pancake breakfasts for 70 women. Four pancakes are made from ordinary starch, starch plus whey protein, resistant starch which is a tapioca-based starch that is modified to be resistant, and the starch is resistant to whey protein.
Arciero and his team monitored the women after every meal for three hours and used the tools to see how many calories they burned. Surprisingly for Arciero, after the women who ate pancakes containing resistant starch plus protein, they experienced increased fat burning, compared to all other pancake types.
"Once you eat a carbohydrate-based diet, the fact that your body can burn a greater percentage of fat because its energy source is very unusual," he said. Adding protein to the dough also makes the women feel fuller,
It suggests a powerful combination of foods for people trying to control their weight. "If you can combine resistant starch with boiled eggs, or whey protein, or peanut protein, or chicken or Greek yogurt, it is a very powerful combination," Arciero said.
However, it is too early to know if resistant starch can help people lose weight. But new evidence suggests that resistant starch can help control weight by altering body composition and improving satiety.
"The potential for nutritional lifestyle interventions to fight obesity is fueled by foods high in carbohydrates, although we do not yet know how significant it is," Arciero said.
