Glance at Carbohydrate Source Besides Rice

Changing the mindset of Indonesian people about the source of carbohydrates in addition to rice is not an easy matter. Moreover, there is the assumption that if you have not eaten rice then the stomach has not been full.

Director of SEAFAST Center (Southeast Asia Food Science & Technology Development Center) Prof. Dr. Nuri Andarwulan said the thinking is part of the psychological side. Because the thought comes from the pattern of care and has been recorded in the brain since childhood.

There are various sources of carbohydrate substitute rice that we can get from local food sources such as sweet potato, taro, cassava, until sago.

By comparison, the amount of carbohydrate in 100 grams of sago reaches 87.55 grams. Then for 100 grams of taro, carbohydrate content reached 26.46 grams. While in 100 grams of rice contained 27.9 grams of carbohydrates.

According to Nuri, the biggest problem is access to various sources of carbohydirate in the community, especially among the urban. "It is not easy to get rice substitutes in big cities. It is the task of Ministry of Agriculture (Ministry of Agriculture) to access local food easily accessible to the community, "he said.

To set the pattern of rice consumption, Nuri suggested that consumed during the day only. Because rice is easily digested and can be used as a source of energy for the body.

He does not recommend the consumption of rice at breakfast or at night so as not to be stored into fat. "Because people do not move. So can eat corn, "he said.

Well, to get around so that the consumption of rice is not excessive, the consumption of food sources of fiber such as vegetables and fruits can be reproduced because it makes the feeling full longer.
